Gnocchi with Sausage and Peppers Recipe

  1. Preheat oven to 425°F.
  2. Combine sausage, gnocchi, bell peppers, tomatoes, onion, oil, Italian seasoning, salt and pepper on sheet pan.
  3. Bake 20 minutes. Use spatula to toss ingredients, then bake another 5 -7 minutes or until gnocchi is lightly golden and tender on the inside and sausage reaches a safe internal temperature of 160°F. (You can also broil for 1 -2 minutes to develop browning more quickly.)
  4. Top with parsley and Parmesan, and serve immediately. Refrigerate any leftovers.
