1 pound Italian sausage, hot or sweet, sliced into 1-inch pieces
1 package (16 oz.) fresh or frozen gnocchi, room temperature
2 bell peppers, any color, cored and sliced thinly
2 cups diced tomatoes
1/2 cup sliced onion
1 tbsp. olive oil
1 tsp. dried Italian seasoning
1/2 tsp. salt
1/2 tsp. black pepper
1/4 cup chopped, fresh Italian parsley
1/2 cup grated Parmesan cheese
Directions
Preheat oven to 425°F.
Combine sausage, gnocchi, bell peppers, tomatoes, onion, oil, Italian seasoning, salt and pepper on sheet pan.
Bake 20 minutes. Use spatula to toss ingredients, then bake another 5 -7 minutes or until gnocchi is lightly golden and tender on the inside and sausage reaches a safe internal temperature of 160°F. (You can also broil for 1 -2 minutes to develop browning more quickly.)
Top with parsley and Parmesan, and serve immediately. Refrigerate any leftovers.
