  1. Make dough in mixer or bread machine. Let rise and refrigerate until ready to use.
  2. About an hour and half before baking, remove dough from refrigerator.
  3. Place 2 Tbsp oil in 9x13 cast iron pan and put dough into pan, stretching to corners as well as possible.
  4. Cover pan with upside down sheet pan and let rise about an hour.
  5. Cube cheese and distribute over dough, add sauce in small drops around the dough, then add pepperoni.
  6. Bake at 450 on middle rack for 20 minutes. Do not have a pizza stone in the oven.
