Beef Empanadas
Ingredients
- 1 pound ground beef
- 1/2 onion
- 1 large russet potato
- 1 1/2 cups frozen peas and carrots mix
- 1 tsp allspice
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 pie crusts
- 1 egg (for egg wash)
Directions
- Brown ground beef with onion.
- Add spices and salt and pepper.
- Cut potato into bit size pieces and boil until tender, about 4 minutes.
- Add potato and peas and carrots into ground beef mixture.
- Let cool.
- Cut pie crust dough into 8 pieces. Roll out each piece and add 1/3 cup of filling to each one. There will be a little left over.
- Wrap each piece and brush the top with an egg wash if desired.
- Bake at 400 degrees for 25 - 30 minutes.
