Beef Empanadas

  1. Brown ground beef with onion.
  2. Add spices and salt and pepper.
  3. Cut potato into bit size pieces and boil until tender, about 4 minutes.
  4. Add potato and peas and carrots into ground beef mixture.
  5. Let cool.
  6. Cut pie crust dough into 8 pieces. Roll out each piece and add 1/3 cup of filling to each one. There will be a little left over.
  7. Wrap each piece and brush the top with an egg wash if desired.
  8. Bake at 400 degrees for 25 - 30 minutes.
