2 lbs. Yukon Gold potatoes, boiled till tender and roughly chopped
5 strips uncooked bacon
½ cup roughly chopped onion
1 cup chopped bell peppers
4 eggs
Garlic salt
½ cup halved cherry tomatoes
¾ cup roughly diced (large pieces!) colby jack cheese

Directions
Cook bacon in oven or in skillet on stove top, saving the drippings.
Using drippings from bacon, saute onion and peppers in skillet.
Whisk eggs and add to skillet. Cook until eggs are mostly done, then add in garlic salt to taste, tomatoes, potatoes and cheese. Heat through until cheese is melted. Sprinkle with green onions.
