Lemon Ricotta Pancakes
Ingredients
- 1 1/3 cup Ricotta cheese
- 3 eggs
- 3 Tablespoons sugar
- 2 teaspoons lemon juice
- Zest from 1 lemon
- 1/2 cup milk
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 tsp salt
Directions
- In bowl, mix cheese, eggs, sugar, butter, lemon juice, and zest until smooth.
- Add flour, baking powder, and salt just until blended.
- Cook pancakes on preheated griddle.
