Black Bean and Corn Quesadillas
Ingredients
- 3 Tbsp oil
- 1 medium onion
- 1 can black beans, rinsed and drained
- 1 1/2 cups frozen corn
- 4 - 5 garlic cloves, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 Tbsp lime juice
- 5 soft taco size tortillas
- 5 ounces shredded cheese
Directions
- Chop onion and saute with oil until they start to become tender.
- Add corn and continue to saute until corn starts darken just a little.
- Add black beans, garlic, salt, pepper, and lime juice. Heat through.
- Mash beans slightly with spatula.
- Add 1/5th of mixture (about 3 ounces) and 1 ounce cheese to each tortilla, fold in half.
- Lightly oil the top of each tortilla and fry on griddle with the oiled side down.
- While the first side is frying, lightly oil the other side.
- Fry until golden brown on each side.
