Black Bean and Corn Quesadillas

  1. Chop onion and saute with oil until they start to become tender.
  2. Add corn and continue to saute until corn starts darken just a little.
  3. Add black beans, garlic, salt, pepper, and lime juice. Heat through.
  4. Mash beans slightly with spatula.
  5. Add 1/5th of mixture (about 3 ounces) and 1 ounce cheese to each tortilla, fold in half.
  6. Lightly oil the top of each tortilla and fry on griddle with the oiled side down.
  7. While the first side is frying, lightly oil the other side.
  8. Fry until golden brown on each side.
