Loaded Baked Potato Soup

Ingredients
- 4 pounds potatoes, cubed
- 1 large onion, chopped
- 4 cups chicken broth
- 3 cloves garlic, minced
- 1/4 cup butter
- 1 1/2 tsp salt
- 1 tsp pepper
- 1 cup whole milk or cream
- 3 tablespoons fresh chives
- 1/2 cup sour cream
- 8 slices bacon, fried and crumbled, for topping
- 1 cup shredded cheese, for topping
- additional sour cream and chives for topping
Directions
- Combine the first seven ingredients in slow cooker. Cover and cook on high for 4 hours or on low for 8 hours (until potatoes are tender). Mash potatoes to desired consistency and add milk, sour cream, and chives.
- Top with additional sour cream, chives and shredded cheese, if desired.
