Broccoli Cheese Soup
Ingredients
- 1 medium chopped onion
- 2 medium carrots, shredded
- 1/2 cup melted butter
- 1/2 cup flour
- 4 cups whole milk
- 4 cups chicken stock
- 16 ounces frozen chopped broccoli
- 1/4 - 1/2 teaspoon fresh ground nutmeg
- 12 ounces grated cheddar and/or American cheese
- scant 1/2 tsp pepper
- 1/2 tsp salt
Directions
- Saute the onion and carrots in butter over medium high heat for 5-7 minutes.
- Add flour and cook for 1 minute. Slowly add chicken broth, stirring constantly.
- Add broccoli and simmer about 5-8 minutes or until broccoli is tender.
- Gradually add milk and heat through, then add cheese and stir to melt.
- Add salt, pepper, and nutmeg.
