Butternut Squash Pizzas with Rosemary

  1. Preheat oven to 400 degrees F. Place sliced onion, garlic, balsamic vinegar, and squash in a roasting pan. Sprinkle with rosemary, salt, pepper, and 3 tablespoons of the olive oil; toss to coat.
  2. Bake in the preheated oven for 20 minutes, or until onions are lightly browned and squash is tender; set aside.
  3. Increase oven temperature to 500 degrees F. On a floured surface, roll dough into 2 pizzas. Spread 2 tablespoons olive oil onto each pizza. Distribute squash mixture over the two pizzas and bake on preheated pizza stone for 10 minutes, checking occasionally, or until the cheese begins to brown.
