  1. 1. Heat a large skillet over medium-high heat. Heat oil in pan. Add onion, jalapeno, and mushrooms; saute 5 minutes, stirring occasionally. add garlic; cook 30 seconds. Stir in lime juice, salts, chili powder, and cumin. Add rice and beans; cook, stirring constantly, 1 minute or until thoroughly heated.
  2. 2. Warm tortillas. Spoon about 2/3 cup mushroom mixture down center of each tortilla; roll up. Serve with salsa, spinach, sour cream and cheese, if desired.
