2 medium cloves garlic, minced or pressed through a garlic press (about 2 teaspoons)
1 pound ground sirloin
1 (15.5-ounce) can black beans, drained and rinsed
1 can (14 1/2 ounces) diced tomatoes, drained
1 6.5 - 8 ounce package corn bread mix
1 cup shredded cheese
2 tbsp minced fresh cilantro
Directions
Preheat oven to 450.
Saute oil in 12 inch skillet over medium heat until shimmering. Add onion, chili powder, 1/2 tsp. salt, and stir until onion is soft, about 5 minutes. Stir in garlic until fragrant, about 30 seconds.
Stir in ground beef, beans, tomatoes, and bring to a simmer about 5 minutes.
Mix cornbread according to package.
Stir cheese and cilantro into pan.
Add cornbread by spoonfuls spread evenly on the top.
Bake until cornbread is cooked through in the center, about 10 - 15 minutes.
