White Macaroni and Cheese with sausage
Ingredients
- 3 cups uncooked pasta
- 1/2 pound Italian sausage
- 1/4 cup butter
- 1/4 cup flour
- 1 tsp salt
- 1/4 tsp + 1/8 tsp pepper, divided
- 2 cups milk
- 1/2 cup grated parmesan (1.5 oz)
- 1 egg, lightly beaten
- 2 cups (16oz) cottage cheese
- 1 tbsp fresh parsley (2 tsp dried)
- 1 cup shredded mozarella (3.5 oz)
- paprika for garnish
Directions
- Cook pasta. Brown sausage. Melt butter, stir in flour. Add 1 tsp salt, 1/4 tsp pepper. Cook 1 minute. Gradually add milk.
- Bring to a boil, stir and cook 2 min or until thick. Remove from heat; stir in 1/4 cup parmesan.
- Pour over pasta and toss to coat.
- Combine egg, cottage cheese, parsley, 1/8 tsp pepper and remaining parmesan (1/4 cup)
- Spoon 1/2 pasta mixture into greased 9x13 pan.
- Top with cottage cheese mixture. Add sausage to remaining pasta mixture and pour over cottage cheese mixture.
- Sprinkle with mozarella and paprika.
- Bake uncovered at 350 for 30 to 35 minutes.
