Matt's Aunt's Neighbor's Salsa

Ingredients

• 1 package Italian dressing mix
• 1/3 c olive oil
• 1/4 c red wine vinegar
• 2-3 avocados, diced
• 2-3 tomatoes, chopped
• 1/4 c red onion, diced
• 1 can black beans, rinsed and drained
• 1 can Mexican corn, rinsed and drained
• lime juice and cilantro to taste - I used the juice of 1 lime

Directions

1. Combine dressing mix, oil, vinegar
2. In a large bowl, combine tomatoes, avocados, onion, black beans, and corn.
3. Pour dressing mix over vegetables and stir gently. Add lime juice and cilantro.
