Dijon Salmon

Ingredients
- 2 tsp olive oil
- 4 tsp Dijon mustard
- 1 tablespoon fresh parsley
- 20 ounces salmon (with skin on)
- 3 tablespoons panko breadcrumbs
- salt and pepper
Directions
- Combine olive oil, Dijon, and parsley.
- Sprinkle salt and pepper onto of the salmon and add the mustard mixture.
- Add the breadcrumbs on top of mustard.
- Bake at 425 degrees for 12 - 15 minutes.
