Chicken Brine

Ingredients
- 1 cup boiling water
- 1/4 cup Kosher salt
- 1/4 cup brown sugar
- 1 tsp peppercorns (optional)
Directions
- Dissolve salt in water.
- Add brown sugar and peppercorns.
- Add enough ice or cold water to equal 1 quart total.
- Once cool, place chicken in brine in the fridge for one hour.
- Rinse and pat chicken dry.
