Pasta Fagioli
Ingredients
- 3 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (29 oz) can tomato sauce or spaghetti sauce
- 5 1/2 cups water
- 1 tbsp dried parsley
- 1 1/2 tsp dried basil
- 1 1/2 tsp dried oregano
- 1 tsp salt
- 1 (15 oz) can cannellini beans
- 1 (15 oz) can navy beans
- 1/3 cup grated parmesan
- 1 pound small pasta
Directions
- In a large pot over medium heat, cook onion in oil until translucent. Stir in garlic and cook until tend, 30 seconds.
- Reduce heat, stir in tomato sauce, water, parsley, basil, oregano, salt, beans and Parmesan. Simmer one hour.
- Cook pasta and stir into soup.
