Carrot Soup

Ingredients
- 2-3 tablespoons oil
- 1 large onion
- 4-5 cloves of garlic
- 1 jalapeno, seeded
- 1 lb carrots, grated
- 1/2 cup chicken broth or water
- 1 cup heavy cream
- 1 tsp salt and
- 1/4 - 1/2 tsp pepper
Directions
- In a medium sauce pan, heat oil and saute onion and jalapeno until tender. Add garlic towards the end.
- Add water or chicken broth and add in carrots. Cover and steam for 10-15 minutes until carrots are very soft.
- Add cream and puree with stick blender until very smooth. Add in salt and pepper until it tastes good.
