In a small bowl, mix the paprika, kosher salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano, and thyme. Stir in the olive oil, and allow the mixture to sit about 15 minutes.
Let meat come to room temperature. Preheat oven to 250 degrees. Line a baking sheet with aluminum foil.
Put the roast into a zip lock bag with seasoning and turn to coat.
Place the roast on wire rack on the prepared baking sheet. Roast 1 hour per pound in the preheated oven, or to a minimum internal temperature of 135 degrees. Tent with foil and let sit 15 minutes before slicing.
