BBQ Chicken and Black Bean Wrap
Ingredients
- 4 to 8 oz chicken
- 1/2 cup prepared barbecue sauce
- 1 cup canned black beans, rinsed
- 1/2 cup frozen corn, thawed (or canned corn, drained)
- 1/4 cup sour cream
- 4 leaves romaine lettuce
- 4 whole-wheat tortillas (10 in. diameter)
- 2 limes, cut in wedges
Directions
- Cook chicken, barbecue sauce, beans, corn and sour cream in a large nonstick skillet over medium-high heat for 4-5 minutes.
- Top each tortilla with 1 lettuce leaf and 1/4 barbeque chicken. Roll up, cut in half and serve. Enjoy with a squeeze of lime.
